Preheat oven to 350 degrees.
In a large bowl (or electric mixer's bowl) combine:
- 4 whole eggs
- 1 cup brown sugar (not packed)
- 1 cup white sugar
- 1 cup yogurt, nonfat vanilla
- 2 cups peanut butter (equals 16 oz. or 1 jar)
- 1 Tbsp vanilla
- 5 cups gluten-free flour mix
- 1/2 cup flax seed (or flax seed meal)
- 1 1/2 cups chocolate chips
- 2 teaspoons xanthan gum
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons baking soda (or 2 Tbsp baking powder)
Makes about 90 cookies.
