Put into a blender, in order:
- 1 1/2 cup milk
- 1/4 cup berry juice (or other fruit juice, or just more milk)
- 1 Tbsp sugar
- 1 Tbsp lemon juice
- 1 Tbsp canola oil
- 1 egg
- 1 cup gluten-free flour mix
- 1 tsp xanthan gum
- 1/2 tsp baking soda
- 1/2 tsp salt
Now either add 1/2 cup berries and stir with a spoon or rubber scraper, or make pancakes and top them with berries.
