Turn on the stove to medium-low heat, and get a frying pan that heats evenly.
In a mixing bowl or blender combine:
- 1 1/2 cup gluten-free flour mix
- 1 tsp baking soda
- 1 tsp vanilla
- 1/4 tsp salt
- 1/4 tsp xanthan gum
- if desired, some nutmeg or cinnamon
- if desired, 1 Tbsp sugar
Stir or shake well. This dry mix can be prepared in advance for camping.
Next add the wet ingredients:
- 1 egg
- 1 cup milk
- 1 Tbsp olive oil
- 1 tsp citrus juice (we use lemon or orange)
The batter is not very greasy, so the frying pan will need to be sprayed with oil before each pancake.
